Tomato and Pancetta Pasta

 

Tomato and pancetta pasta is a flavourful crowd pleaser that only takes half an hour to make! It is easy to cook with only a few ingredients. This is a great recipe to add to your list as you can get these ingredients in all supermarkets and it is a simple meal to cook for friends and family. I like to pair this with salad or garlic bread.

Ingredients you will need for this meal are:

  • A pasta of your choice (conchiglie is used in the photo above)
  • Pack of diced pancetta
  • Tin of chopped tomatoes
  • Two garlic cloves
  • Chilli flakes
  • Rosemary stick
  • Salt and pepper
You can use the same instructions from this pasta dish to make any kind of tomato pasta, whether you want to use chicken, chorizo or no meat at all.
Note: I buy all my ingredients from Aldi (a cheap supermarket which is great for students). 

Cooking instructions:

Finely chop two garlic cloves and add to a large pot on a medium heat with a dash of oil. Fry this for a couple of minutes before adding you pancetta. Cook your pancetta until it is crispy and then add a tin of chopped tomatoes. Season with chilli flakes, salt, pepper and a rosemary stick and let this simmer for thirty to thirty five minutes. After this has been simmering for around twenty minutes, boil your pasta for ten minutes. Next, reserve a third of a cup of pasta water and combine this with your sauce and cooked pasta. Plate up your pasta and if available, serve with a garnish of basil, black pepper and mozzarella. Enjoy!
